Super funky coffee with complex notes of strawberries and strawberry cheesecake, strongly aromatic coffee!
This coffee was subjected to dry anaerobic fermentation lasting 48 hours, during which dehydrated pieces of strawberry and wine yeast were added to the anaerobic environment. Later, the coffee was dried on raised beds at a temperature below 35 C until the ideal humidity was reached.
Jairo Arcila belongs to the third generation of coffee growers from Quindía, Colombia. He is married to Luz Helena Salazar and they have two children together, Carlos and Felipe Arcila, who are co-founders of Cofinet. Jairo’s first job was with Colombia’s second largest exporter, where he worked as a mill manager for over 40 years until his retirement in 2019. Jairo bought his first coffee farm, Finca La Esmeralda, in 1987 and planted his first parcel of Caturry here. He was lucky enough to be able to earn money by producing coffee on his farm in addition to his full-time job. From his savings, Jair slowly managed to buy five more farms. After Esmeralda came Villarazo, Mazatlan, Santa Monica, Maracay and then Buenos Aires. Now, during the harvest season, Jairo can provide jobs to local residents and create an economic impact on the community. He gained great knowledge and experience from his sons in collecting, sorting and processing coffee. These insights empowered Jair and gave him the tools needed to present fantastic coffees with amazing profiles from this region.
