Chocolate Salt 70% – 70 g
The salt crystals that Puchero has used come from the Salinas de San Juan in the town of Saelices, Guadalajara. It is a saline spring deposit, produced by sedimentary deposits from the sea 200 million years ago, when the sea covered half of the peninsula.
The crystals are collected manually at dawn. These enhance the sweet and slightly fruity profile of Nicaraguan cacao.
The facilities have two wells or waterwheels, cookers and cookers, pools, pipes, a warehouse or storehouse and a singular hermitage with an ellipsoidal plan. The entire complex was declared an Asset of Cultural Interest (BIC) in 2007.
