Fermented white cocoa from hybrid varieties known as Java Criollo. Round, almond-shaped, milky and complex.

This cocoa grows in the fertile volcanic soils of the eastern tip of Java, called the “Ijen Plateau”, at the PTPN XII plantation.

These grains stand out for being remarkably white. Once harvested, they are fermented in wooden boxes, which are changed every day, this process is called “cascade system”. This system ensures homogeneous fermentation. Fermentation takes only 3 days, because the beans have relatively little pulp. Once fermented, they are intensively washed until they have a crisp white outer shell.
